Welcome to your Arancino Cooking Class

Around mid-morning or early evening—depending on the time of your selected tour—your class begins at Porta Messina Restaurant, right in the heart of Taormina. You'll start with a quick meet-and-greet with your host, a local chef, and your fellow classmates, accompanied by a coffee or a traditional aperitivo.

Your chef will then introduce you to the history of the arancino, tracing its origins back to the 10th century and explaining how it evolved into one of Sicily’s most beloved street foods. After that, it’s time to roll up your sleeves and dive into the hands-on portion of the class.

Learn the Secrets Behind Perfect Arancini

This part of the class is all about technique. You'll prep the rice first, learning how to season it properly and let it cool to the right texture. Then comes the shaping—cupping the warm rice in your hand, adding the filling, and sealing it all into a neat cone. After a quick coating of flour and breadcrumbs, it’s time for the final step: frying. Your chef will show you how to get the timing and temperature just right, so your arancini has a perfect, golden crisp.

Sit Down and Enjoy Your Sicilian Meal

Once the final arancini have been fried, it’s time to gather around the table and enjoy. Plates of your handmade arancini are served hot, crisp, and with a glass of local wine or a soft drink. This is your chance to relax, savor what you’ve created, and soak up a few more insights from your chef. As the class winds down, you’ll receive a certificate to take home—a reminder of your time in the kitchen and a recipe worth repeating.
